I’m afraid I don’t have any suggestions on agents, but the flight alone from Newark for two would probably cost half of your budget, which stings.
If you’re not opposed to it, you may want to look into taking a train as an alternative. It’ll be loads cheaper! It’ll take longer, sure, but you’ll end up saving hundreds that you may could spend elsewhere!

With a limited budget and staying at a disney resort I would recommend only going to disney. the cost of transportation to Universal and the space center is really going to eat into your budget.
disney park tickets are what they are. they really do not discount them. AAA has a slight discount, but do not expect to find a great deal on park tickets that is legit.
You are not going to be able to do all of that for your budget. I would suggest booking with Disney (if you have not already) most of the value hotels are sold out for this deal. As for the air fare I would just check each airline each day for any specials. Keep an eye on spirit air. They don’t fly out of newark but from LGA or Atlantic City. Just keep in mind that spirit charges for seat assignments (if you want to choose your seat) and baggage as southwest does not. I am a cheap stake when it comes to a vacation, and I have yet to find a disney vacation under 2000 easily. Good luck
